I spotted a pack of ‘mini peanut butter cups’ whilst shopping the other day and thought they’d be the perfect size to throw in a cookie mix. The only reason I added the white chocolate chips is because they needed to be used up! I found the recipe after searching for a while on line from real mom kitchen. These are really moist and gooey cookies, easy to make too! A real treat for peanut butter lovers out there. So here’s how I made them..
What you will need (makes around 12 cookies)
3/4 cup of butter
1 cup sugar
1 cup of brown sugar
1 cup of creamy peanut butter
1tsp vanilla extract
1tsp baking soda
1/2 tsp of salt
2 1/2 cups of plain flour
1 cup of white chocolate chips (optional)
1 bag of mini Reese’s peanut butter cups
Preheat the oven to 180. In a large bowl add softened butter, sugar, peanut butter and eggs. Whisk until nicely combined then add vanilla extract, baking soda, salt and sift in the flour. Whisk the mix until it starts to form a dough and thicken. Fold in a generous helping of white chocolate chips. Line a baking tray with greaseproof paper, then scoop out 6 large spoonfuls of cookie dough and place them evenly onto the tray. Then use the back of a spoon to gently flatten them. Pop them in the oven and leave to bake for around 11-12 minutes.
In the mean
time tidy up the mess, is it just me who always gets flour everywhere? cut up the mini Reese’s peanut butter cups into halves. Check on the cookies at around 12 minutes, they should be going a light golden colour. Carefully take them out of the oven, then stuff them with the chopped up pieces of peanut butter cups! Once the cookies have been generously stuffed and sprinkled with the peanut butter cups place the tray back in the over for another 2-3 minutes. Take them out, then leave them to cool for a few minutes.
I think these cookies are best served fresh from the oven, whilst still warm. I like my cookies nice and gooey. If you cut them in half whilst still warm you should have something that looks like this..
Drool. Look at all that melted milk chocolate mixed with the peanut butter and white chocolate chips..
What do you guys think? They went down well in this house. I think they would make a nice gift too! (Who doesn’t like freshly baked cookies?) These would be great especially for those who are fans of Reese’s peanut butter cups or peanut butter and chocolate in general!
