
I spotted these Reese’s pieces chocolate eggs in Tesco, they’re filled with peanut butter. I thought they’d make a great topper for Easter themed cupcakes, a little different from mini eggs! Here’s the recipe and how to make them if you want to bake these for yourself, now Easter is fast approaching…
What you will need:
175g of unsalted butter
175g of white sugar
3 large, fresh eggs
175g of self raising flour
for the icing
600g of icing sugar
250g of softened butter
yellow food colouring
your choice of sprinkles
2 tablespoons of milk
2 tablespoons of milk
Pre-heat your oven to 175 degrees, line a baking tray with cupcake cases of your choice. In a large bowl add the softened butter and the sugar, whisk on a high speed until it starts to cream together and is nicely combined. Now add the three eggs and whisk again until the batter becomes yellow. Sift in the self raising flour and whisk well, on a high speed until it starts to form a lightly coloured batter.

Scoop the mixture into the cupcake cases, about 3/4’s full. Pop the tray in the oven and leave to bake for around 15-20 minutes (depending on cupcake size!) Keep an eye on them as these don’t usually take long to bake. When done, take them out of the oven and place on a cooling tray. Place a skewer through the cupcakes and if it comes out clean, they’re ready to leave to cool, for about 20 minutes.

When the cupcakes are cool, it’s now time to decorate them. In a large mixing bowl cream the butter, slowly add parts of the icing sugar at a time, then the milk and the yellow food colouring, mixing together until the butter cream becomes light and fluffy. If you’d like the frosting to be a little more stiff, simply pop it into the fridge for 10-20 minutes before you pipe it onto the cupcakes.

Once you’ve iced your cupcakes with the butter cream frosting, add the Reese’s Pieces chocolate, peanut butter eggs and sprinkles of your choice! Now they are ready to eat. I think these are so cute for Easter, and great for peanut butter fans. What do you think? The vanilla sponge is so soft, I’m a sucker for cute sprinkles.
