These are fantastic for satisfying your dessert cravings without having to bake a entire cake or a big batch of cookies (and then ending up eating them all yourself.) They only need one minute in the microwave and you’re good to go!

These would be delicious and even more perfect with a generous helping of chocolate chips, but we were all out so instead I used heart shaped sprinkles and served with a large dollop of cream instead mmm. I spotted the recipe on pinterest from here So here’s what you need to do to make this very easy, simple and delicious little dessert for one..

What you will need:
1 tablespoon of butter
1 tablespoon of white sugar
1 tablespoon of brown sugar
1/8 teaspoon of vanilla extract
A pinch of salt
1 egg yolk
3 1/2 tablespoons of flour
1 tablespoon of chocolate chips or sprinkles
What to do:
Place the butter in a ramekin or a mug, melt in microwave for 10-20 seconds.
Mix in white and brown sugar, with a pinch of salt and the vanilla extract
Separate the egg white from the yolk, add in the yolk and stir..
Add in the flour and mix in the chocolate chips or sprinkles
Pop it in the microwave for 40-60 seconds.. and enjoy!
Serve whilst still warm with a dollop of ice cream or cream, yum!
Edit: If you over do it slightly in the microwave depending on the power of your microwave don’t worry.. the texture can look more cake-like, than cookie-like (all technical terms there) but it’s still just as yummy! The picture does look like it has a slightly cakey texture but when you bite into it its just like a warm gooey cookie 🙂

Looks more like a cake than a cookie
I can assure you it has a cookie texture when eating it.. but if you over do it in the microwave it can have more of a cake like consistency 🙂 x

This looks delicious! I've never had much luck with microwave-in-a-cup desserts though. I tried to make the microwavable brownies once and the edges got burnt while the center was raw 🙁 I want to try this one though!
