Are these the cutest cookies you have ever seen? I bought these Miffy shaped cookie cutters from eBay (here) they are really easy to use as the cutting ‘stamp’ part just pops out. I found this recipe online, the biscuits are slightly crunchy on the outside but warm and chewy on the inside. Here’s how I made them and what you will need if you want to try them out yourself…
225g of unsalted butter at room temperature
225g of white sugar
1 large egg
1 teaspoon of vanilla extract
375g of plain flour (sifted)
pre heat your oven to 160 degrees, in a large mixing bowl add the (softened) butter and caster sugar then whisk well until the texture is light and fluffy. Add the egg and vanilla extract and continue to whisk until nicely combined. Now add in the sifted flour and mix well, until it starts to form a dough this part takes a little bit of elbow grease (unless you use an electric mixer of course, but i did this by hand)
Line a tray with parchment paper, flour your work surface then roll out your dough, cut out your cookie shapes and line them together on a tray. Place the tray in the fridge to chill for 15 minutes, this helps the cookies hold their shape and not spread whilst baking. Take the cookies out of the fridge and place in the pre heated oven for around 8 minutes. Baking time varies on how thin your cut out cookies are so they may need a little less or longer in the oven, keep an eye on them as you don’t want your bunnies to burn!
After keeping a close eye on your cookies, the edges (look out for ears and paws) should start to ever so slightly start to golden… depending on how crunchy you like your cookies. However don’t worry that they look ‘pale’ when you take them out of the oven, they’re supposed to. Once your bunnies are baked, carefully pop them on a tray to cool, before deciding if they’re simply too cute to eat or not.
Once the cookies have cooled, they are ready to eat and there you go… A sugary-sweet, Miffy shaped sugar cookie party in your kitchen. What do you think?
