
Ahh S’mores bars, cookie dough, galaxy chocolate, digestive biscuits, marshmallow fluff and then more cookie dough, what’s not to like? I found this recipe on pinterest from cookies and cups but In the US they have pre packaged cookie dough and usually use something called ‘grahams crackers’ but the closest thing I could find here in the UK, was the good old plain digestive biscuit.. even without the grahams crackers and the Hershey’s chocolate I was certainly not disappointed with these. Here’s how I made them from scratch..
What you will need:
2 eggs
1 cup of white sugar
1 cup of brown sugar
1 tsp of baking soda
3/4 cup of softened butter
a pinch of salt
2 and a half cups of plain flour
as many chocolate chips as you like
5 digestive biscuits
4 small galaxy chocolate bars
1 tub of marshmallow fluff
Preheat the oven to 180 degrees. Line a tray (I used 9×6) with baking paper and lightly grease it. In a large bowl, add the butter, the sugar, the two eggs and stir well. Then add the the salt, the baking soda and sift in the 2 and a half cups of flour and whisk well until a dough starts to form. Now fold in as many chocolate chips as you like. Then spread half of the cookie dough mix and evenly press it into the tray to make the base for the S’mores bars.


Place the galaxy chocolate bars on top of the cookie dough. Then break up five digestive biscuits into little crumbs (this part is kind of tedious) and scatter over the top of the chocolate bars. Now scoop out the marshmallow fluff and spread generously over the digestive biscuit crumbs. Then use the remaining cookie dough mix to cover the top marshmallow fluff. Now, Place it in the oven to bake for around 25-30 minutes, until the top is slightly golden.

Once you take the tray out of the oven leave it to cool for around an hour and a half. Then put it in the fridge for half an hour to set the chocolate and marshmallow fluff.

That's actually really funny that you mention the bit about graham crackers. I'm studying abroad this semester in Bath, but I'm originally from Virginia. My flatmate and I were trying to find the equivalent to graham crackers a few weeks back because we were craving smores! Definitely will have to try digestives now. 🙂 These look wonderful!

Mmmmm NEED! I've been meaning to make these for a while, they look sooooo good! With the biscuits, you could put them in a plastic sandwich bag and use a rolling pin to whack them and make them into crumbs – less time! 🙂 xx

2 Girls and a Blog
I've been reading your blog for a while now and after a hectic week at university and trying to do 101 other things, I've finally sat down to reading your latest posts. I'm just on my way to Sainsbury's to stock up in preparation for the winds tonight (I'm in Southampton where they're due to be the strongest – lucky me!!), and marshmallow fluff is definitely on my list. Everything else for this recipe seems to have found its way into my cupboard already 😉
