Rainbow cupcakes

This morning at 7:00am I couldn’t sleep. So.. I headed into the kitchen and these colourful creations were born! I think these are so pretty and mesmerising just to look at and they were very easy to make! I always thought there was some kind of baking magic involved to get the sponge those colours (nope, just lots of food colouring!)

What you will need:
2 vanilla cupcake mixes (I found one box wasn’t going to be enough) Food colouring, eggs, butter, icing sugar and sprinkles. It must be a light cake mix so that the colours show through chocolate wouldn’t look as good sadly.
Pre heat the oven to 180 and follow the cake mix instructions.. add eggs and water, along with the vanilla cupcake mix(‘s) into a bowl and stir until smooth. Then separate the vanilla cake mix into 4 bowls and then add the food colouring of your choice I chose Dr Oetker food gel tubes (from Tesco) in blue, pink, green and yellow. Be careful not to mix the spoons! Scoop the different coloured cake mixes into the baking tray and you should have something that looks like this..

Pop the baking tray in the oven for around 12-15 minutes and when you take them out you should have some pretty colourful cupcakes that look like this.. oooh, ahhh that sponge!

Mix icing sugar with softened butter until its to a consistency that you like (the thicker the better in my opinion!) Slather the cakes in a generous helping of buttercream frosting and add sprinkles..



Take a big bite and look at the beautiful colours on the inside, these really are lovely to look at!


What do you guys think? I love them..Much prettier than a plain vanilla cupcake mix!

    These look lovely. Where did you get the cake mix from? Whenever I try and make rainbow cupcakes all the colours look a strange tinge of yellow. I know you can buy white cake batter in the US.
