Yes, you read that right. A cookie pizza. The recipe which I adapted from all recipes.com (you can change measurements to metric by clicking ‘change servings’!) But I find using cups easier. This recipe was for one giant 14 inch pizza cookie. Sadly I didn’t have a baking tray or dish big enough, so I used two 9 inch baking dishes instead which made two pretty big cookies! I always found cookies hit and miss when I made them, too dry, too crunchy but this is so gooey and thick! I will be making this again for sure. So here’s how I made it..
What you will need for the cookie:
2 cups plain flour
3/4 of a cup of brown sugar
3/4 of a cup of white sugar
2 medium sized eggs
1teaspoon of baking soda
1 cup of softened butter
Preheat the oven to 180. Add brown sugar, white sugar and butter to a large bowl. Whisk until nice and fluffy. Add in the two eggs and continue to mix. Sift in the flour and baking soda and mix until well blended. Throw in a generous helping of chocolate chips. I lined the two 9 inch baking dishes with parchment paper, then used the left over butter to lightly grease the sides of the dish. Spread the mix evenly into each dish, make sure you leave around 2 inches around the edges because this stuff will spread! Pop in the oven for 18-20 minutes. Pierce each cookie with a toothpick in the centre and if it comes out clean, you’re done! If not pop it back in for an extra minute or two.
After leaving it to cool for twenty minutes or so, you should have something that looks like this! This cookie is so gooey with a slight crunch to the edges. How a cookie should be, well that’s how I like them anyways! Now time for the chocolate butter cream frosting. Add the 1 cup of softened butter to a bowl, beat until soft. Sift in the 3-4 cups of icing sugar and add two tablespoons of milk. Whisk until combined. Add 2-3 (depending on how chocolate-y you want the icing to be) tablespoons of cocoa powder and whisk until the icing is nice, light, and smooth.
Spread the chocolate butter cream frosting generously over the giant cookie. You can add whatever toppings you want, either smarties, Reese’s pieces, jelly beans etc! This pizza can be as sweet or as simple as you want. I didn’t want to go too overboard with the sweet toppings.. so I left it at the chocolate butter cream frosting and sprinkles.
I think these are best served still warm, when the chocolate chips are all melted and gooey! I’ve been picking at this all morning! My mum emailed to say that the one I gave her to take into work disappeared within 15 minutes! What do you think of this cookie pizza, pie creation?!
