My brother and his girlfriend flew home from Egypt this morning. I thought I’d bake them some cookies. But not just any cookies. Ooey, gooey, Rolo centre cookies. These cookies are really soft and pillowy. I probably just made that word up? The first bite is the best, when you are greeted with melted chocolate and sticky caramel. Here’s what you’ll need to bake a batch of these. They are really simple, quick and easy to bake but make a lovely treat.
Makes around 8 generously sized cookies
2 cups plain flour
3/4 of a cup cup of brown sugar
3/4 of a cup of white sugar
2 medium sized eggs
1 teaspoon of baking soda
1 cup of softened butter
2 packets of Rolos
Pre heat the oven to 180 degrees. Take a large mixing bowl add brown and white sugar, add butter and whisk until combined. Add two medium sized eggs, whisk again for a minute or two. Now sift in the flour and add the baking soda. Whisk for a few minutes, now add a generous helping of milk chocolate chips. Line a baking tray with foil, rub some flour on your fingers and onto the palm of your hands. Roll the cookie dough into a ball and nestle a Rolo in the middle of the cookie dough ball, then cover with more cookie dough repeat 8 times and place the tray in the oven. Leave to bake for around 11-13 minutes. When done, you should have something that looks like this..
Leave the cookies to cool on the side for around 10-20 minutes. I like to serve and eat them whilst they’re still warm and fresh from the oven. This makes sure that the Rolo caramel centre is still warm and gooey..
