My brother and his girlfriend flew home from Egypt this morning. I thought I’d bake them some cookies. But not just any cookies. Ooey, gooey, Rolo centre cookies. These cookies are really soft and pillowy. I probably just made that word up? The first bite is the best, when you are greeted with melted chocolate and sticky caramel. Here’s what you’ll need to bake a batch of these. They are really simple, quick and easy to bake but make a lovely treat.
Makes around 8 generously sized cookies
2 cups plain flour
3/4 of a cup cup of brown sugar
3/4 of a cup of white sugar
2 medium sized eggs
1 teaspoon of baking soda
1 cup of softened butter
2 packets of Rolos
Chocolate chips
Chocolate chips
Pre heat the oven to 180 degrees. Take a large mixing bowl add brown and white sugar, add butter and whisk until combined. Add two medium sized eggs, whisk again for a minute or two. Now sift in the flour and add the baking soda. Whisk for a few minutes, now add a generous helping of milk chocolate chips. Line a baking tray with foil, rub some flour on your fingers and onto the palm of your hands. Roll the cookie dough into a ball and nestle a Rolo in the middle of the cookie dough ball, then cover with more cookie dough repeat 8 times and place the tray in the oven. Leave to bake for around 11-13 minutes. When done, you should have something that looks like this..
Leave the cookies to cool on the side for around 10-20 minutes. I like to serve and eat them whilst they’re still warm and fresh from the oven. This makes sure that the Rolo caramel centre is still warm and gooey..

From the outside these could even pass for just plain, old, regular chocolate chip cookies. Until you take a bite, that is. What do you think of these cookies?

I made these cookies today, and they did not work at all ! they stuck to the foil and did not brown we used the exact recipe and step by step method and they just did not work !
I really should try these! They look DELICIOUS!
