Giant valentines day cookie

It has been quite some time since I have baked something, with Valentines day just around the corner, I got a little creative with a giant cookie. I thought about baking a nice batch of normal sized cookies but go big or go home right? In terms of cookie sizing bigger really is better at least in my book anyways. 120g of unsalted butter at room temperature
one large egg
100g of white sugar
half a teaspoon of vanilla extract
one bag of chocolate chunks
125g of plain flour
half a teaspoon of bicarbonate of soda
One tub of Betty Crocker’s vanilla icing
strawberry shimmer crunchPre heat your oven to 180 degrees, take a large mixing bowl and cream the butter (make sure you take it out of the fridge for around 15-20 minutes before you start, to allow it to soften!) the egg, the sugar and vanilla extract mix it all together until nicely combined. Now sift in the flour, and bicarbonate of soda, and gently fold in the whole bag of chocolate chunks, don’t be shy! Take a baking tray, line it with tin foil or baking paper, sprinkle it with a little flour then pour the cookie mix onto the baking tray. Flatten and shape it slightly into a circle and then pop it into the oven for around 14-18 minutes. Depending on cookie crispy-ness, yes thats totally a technical baking term.

After checking on your cookie at around the 14 minute mark, if you like it gooey take the cookie out anytime at around 14 minutes, if you like your cookies a little crispier leave it to bake for 18 minutes, just make sure you keep an eye on it so it doesn’t burn! After leaving the cookie to cool for around 20-30 minutes, you can now begin to ice it! For quickness I used a tub of Betty Crocker’s vanilla icing, I then decorated it with flumps, smarties, pastel coloured mini eggs, love-hearts and heart-shaped sprinkles, sickly sweet perfect for Valentine’s day don’t you think?!

    Holy wow, this looks incredible! I love the giant cookie desserts they have in Pizza Hut so I would underbake this so it’s all squidgy and have it with ice cream. And eat it all myself… *Homer Simpson drool*

    Oh my word, sugar overload but it looks so wroth it! My skin just erupted in about fifty trillion spots at the sight of it but oh my word, yes please! This looks like the perfect treat when you just need to eat naughty food, bad films and have a good sob, haha!

    I love giant cookies!!! The cookie dough is Pizza Hut is amazing so I always try and recreate that. I love all the pretty pink decorations 🙂
