Galaxy inspired cupcakes!

It had been a while since I did some baking, however after watching the Guardians of the Galaxy vol 2 trailer (Baby Groot was wearing a teeny tiny Starlord jacket!) I decided to bake some Galaxy inspired cupcakes. I was pretty pleased with how these turned out… they are a lot easier to make than they look! What you will need for the vanilla cupcakes:
180g of unsalted butter
180g of caster sugar
3 medium eggs
180g of plain flour
1/2 a teaspoon of baking powder
Gel food colouring in 2 x red, 2 x blue, and 2 x black.

As always pre-heat your oven to 180 degrees or 160 degrees if your oven is fan assisted. Take a large mixing bowl and cream together the butter, eggs and sugar, gently sift in the flour and baking powder and whisk on a high setting until nicely combined. Separate the vanilla cake mixture into 3 bowls with 3 different spoons and add the gel food colouring, one black, one blue, and mix together the red and blue to make purple. I then squirted black food colouring over the top to create a splatter effect!

Line a baking tray with paper cases, this part is up to you, layer the colours when spooning the cake mix into the cases, do not mix them just layer them on top of each other, for example a spoonful of blue, then purple, then more blue, then black. Pop them in the oven to bake for around 18-20 minutes.
galaxy-inspired-cupcakes-spongeOnce the timer has gone off, pierce the cupcakes with a wooden skewer, if the skewer comes out clean they are done! Leave the cakes to completely cool before you try and remove the cupcake cases! But once they are cool you should have something like this!

Now it is time to make the buttercream frosting here’s what you will need:
180 grams of softened unsalted butter
300 grams of sifted icing sugar.
In another large mixing bowl cream together the softened butter and sift in the icing sugar, then whisk on a low setting. Separate the buttercream frosting into three separate bowls and add the food colour again, blue, black and red and blue to make purple.

Take a large piping bag and spoon in one of each colour, before carefully piping onto the cupcakes using a large nozzle and you should have some pretty psychedelic icing!
