I know, I know yet another baking post? My apologies, I will be back to covering other blog topics shortly, I promise. I just wanted to share these Cheeseburger cupcakes with you guys! I baked them this earlier morning to take to a family BBQ later this afternoon (fingers crossed that the rain holds off.) The burger ‘buns’ are vanilla sponge and the ‘burger’ is chocolate brownie. Here’s how I made them and what you will need.
For the Victoria sponge burger ‘buns’ :
125 grams of unsalted butter at room temperature.
125 grams of caster sugar
half a teaspoon of vanilla extract
2 large, fresh eggs
half a teaspoon of baking powder
2 tablespoons of semi skimmed milk
sesame seeds for decoration
For the cheese, tomato sauce and lettuce:
You can use buttercream and food colouring if you wish but I bought ready rolled icing.
For the brownie burgers: I used shop bought tray bake brownies as I didn’t have much time but you can make it from scratch if you wish!

As always pre heat your oven to 180 degrees or 160 for fan assisted ovens. In a large mixing bowl, cream together the butter, sugar and vanilla extract, mix or whisk together until it’s light and fluffy. Now add the two fresh eggs and gently sift in the flour and baking powder. When the cake mix is combined add the milk and mix until it is nice and smooth.
I lightly lined my cupcake cases with butter as I didn’t want any trouble getting them out! Divide each mixture evenly between the cupcake cases, then pop in the oven for around 18-20 minutes until lightly golden brown. Leave the cupcakes to cool completely before removing them from the cases.
Whilst the cakes are cooling it’s time to make the cheese and lettuce, lightly dust a chopping board with icing sugar, roll out the yellow icing for the cheese and cut into squares, do the same with the green icing, I used a leaf shaped cutter for the lettuce. When the cupcakes are cool cut them in half, I used a cookie cutter to cut out the brownie burger and placed it on my vanilla sponge ‘bun’. Top the burger with cheese and lettuce, then add a little bit of red royal icing for the tomato sauce. Put the top bun on your burgers and lightly dab a drop of water and top with sesame seeds for them to stick.
I think they are the cutest little cupcakes…
